When I owned From Greenwich bakery, we all enjoyed working with Charlotte Penn. She was a great motivator with the bakers and on the production line. We always found her to be extremely innovative and she very quickly grasped the kind of cake that would sell well and taste delicious. Both her marmalade and gingerbread cakes were eaten on BA European airlines with good volumes. She also developed great cakes- sold in prestigious food shops and other retail outlets.
